Be My Valentine

It’s here, our annual love fest started by St Valentine, get ready for the red roses, cards and abundance of chocolate. Want something different from Hallmark & Boxed Chocolates this year? Try your hand at one of these home made delicious healthy Chocolate Recipes! My personal favourite is the Chocolate Fudge Cake, served cold this has the most decadent texture and is made from delicious sweet potatoes!!

Chocolate FudgeĀ Cake

stuff you need

  • 2 medium sweet potatoes, roasted in skins until soft
  • 1/2 cup raw cacao powder
  • 1/2 cup dates, soaked for at least 3 hours
  • 1 cup almond meal
  • 1/4 cup coconut oil
  • pinch salt
  • 1/2 tsp baking powder

what you do

  • preheat oven to 170 c
  • blend sweet potato flesh with dates in a food processor until smooth
  • add the remaining ingredients and blend
  • transfer to a lined cake tin, cover with foil and bake for 45-50 minutes
  • remove from foil and allow to cool completely in tin
  • best enjoyed cold

Raw Chocolate

stuff you need

  • 1 cup cacao butter OR coconut oil
  • 1/2 cup raw cacao powder
  • 1/4 cup rice malt syrup/agave/coconut sugar
  • 1/2 tsp vanilla paste
  • oinch sea salt
  • dried mulberries or goji berries
  • chocolate moulds

what you do

  • melt cacao butter/coconut oil over double boiler
  • remove from heat and add remaining ingredients excluding mulberries
  • whisk the chocolate mix until smooth
  • add dried mulberries to moulds and top with chocolate mix
  • allow to set in the fridge for 2-3 hours
  • best eaten straight from the fridge

*these will not travel far as they will melt at room temperature, if your wanting a gift that travels, see below šŸ™‚

**if you don’t have any moulds, line a baking tray with baking paper and spread the chocolate mix and toppings on that

Handmade ChocolatesĀ 

stuff you need

  • 1-2 blocks 80% dark chocolate
  • assorted nuts, dried berries
  • chocolate moulds

what you do

  • melt down the chocolate blocks over a double boiler (or just a bowl over simmering water)
  • allow to cool slightly
  • add desired nuts, dried fruits or flavourings to moulds, top with melted chocolate
  • allow to set in the fridge for 2-3 hours
  • present in a box with a cute ribbon
